Whip up this 15-minute skillet pasta recipe with sausage, veggies, and cheese—an easy, kid-approved one-pan dinner.

Instructions

    Set the water to boil (at least 5 cups).

    Prepare the tomatoes (or other veggies) and garlic, as directed. To a large skillet, add the tomatoes, garlic, spaghetti noodles, olive oil and salt and pepper, to taste. I use about a teaspoon of salt and 1/2 teaspoon of pepper.

    Pour boiling water overtop, just until covered, adding the broth, if needed and if using. Add the wine, if using. Cook over high heat for 8 to 11 minutes, until the spaghetti is al dente. If needed, sauté the sausage.

    Stir the sausage and sauce into the cooked pasta, and sprinkle the cheese overtop. Cover, reduce heat to medium-low and cook gently for 2 to 3 minutes to allow any excess liquid to be absorbed and the cheese to melt. Remove from heat and serve.

  • Sauce options: Alfredo, tomato, or pesto are all winners, and each one gives the dish a slightly different vibe. My kids are split—one loves the creamy alfredo version, another swears by tomato sauce, and I secretly love pesto because it feels a little “fancier” without any extra work.
  • Make it fresh: If you’ve got fresh herbs like basil or parsley on hand, sprinkle them over top before serving. It adds a bright finish and makes the whole dish feel a little more special (just don’t tell my green-fearing child, who somehow always spots a single leaf of parsley from across the room).
