    Heat a large skillet or dutch oven over medium/high heat. Add the chicken, 1 teaspoon salt, pepper, garlic powder and paprika. Sauté the chicken for about 5 minutes until almost cooked through.

    Add the onion, bell peppers and another pinch of salt. Cook for another 5 minutes, stirring occasionally. Add the garlic and cook for another minute. Add the tomato paste and rice and stir until the chicken and veggies are well coated.

    Pour in the broth, 1 more teaspoon of salt and stir until well combined. Bring mixture to a boil then cover the pot and reduce heat to low and cook for 15 minutes. Then turn off the heat, leave it covered and let it rest for another 10 minutes.

    Remove the lid, fluff with a fork and serve hot!
