Instructions

Mix wet ingredients: Stir together 6 tbsp natural peanut butter (just peanuts + salt), 1 tbsp honey, and 1 tsp pure vanilla extract until smooth. Add 5 tbsp unsweetened almond milk (to bind, add more as needed) a tablespoon at a time until the mixture is soft and glossy — you'll likely need most or all of it since the maple syrup is gone.

Combine dry ingredients: In a separate bowl, whisk together 1 cup old-fashioned rolled oats, 1/3 cup flaxseed meal (ground flax), 2 tbsp chia seeds, 3 tbsp cacao nibs, 4 vanilla protein powder scoops (about 1 cup total), and 1/4 tsp fine sea salt so the protein powder is evenly distributed with no clumps.

Combine wet and dry ingredients.

Fold in 1/2 cup crispy rice cereal.

Roll into balls and refrigerate for 30 mins

Store in an airtight container in the refrigerator for up to two weeks and up to three weeks in a freezer
