Lemon Garlic Butter Chicken Spiedini

    Whisk together olive oil, white wine, 2 tablespoons lemon juice, lemon zest, 2 cloves minced garlic, red pepper flakes, oregano, 1 teaspoon salt, and 1/2 teaspoon pepper in a bowl. Add chicken pieces, toss to coat, and marinate for at least 30 minutes (or up to 4 hours refrigerated).

    Mix Italian breadcrumbs, panko, Parmesan, garlic powder, remaining 1 teaspoon salt, and remaining 1/2 teaspoon pepper in a shallow dish. Thread marinated chicken onto skewers, then dredge each skewer in the breadcrumb mixture, pressing gently to coat.

    Spray a grill or grill pan with olive oil and heat to medium-high. Grill skewers 10–12 minutes, turning occasionally, until chicken is cooked through and breadcrumbs are golden.

    While chicken cooks, melt butter in a small saucepan over low heat and stir in the remaining 1 tablespoon lemon juice and 2 cloves minced garlic. Transfer skewers to a platter, drizzle with lemon garlic butter, and garnish with fresh parsley.
