Instructions

  1. 01

Whisk together mayonnaise, vinegar, sugar, salt, and 1/2 teaspoon pepper in a medium bowl. Add slaw mix, and toss to coat. Set aside. Stir together Cajun seasoning and remaining 1/2 teaspoon pepper in another medium bowl. Add shrimp; toss to coat.

  2. 02

Heat a large cast-iron skillet over high heat until starting to smoke, 3 to 5 minutes. Add 1 tablespoon of oil and about one-third of the shrimp; cook, undisturbed, until shrimp have developed a dark brown crust, about 2 minutes. Cook, stirring occasionally, until shrimp are opaque and crust darkens, 1 to 2 more minutes. Transfer to a plate; repeat process with remaining oil and shrimp.

  3. 03

Divide slaw evenly among tortillas; top with shrimp and avocado slices. Serve with lemon wedges and hot sauce.

Variations & swaps

Blackened Shrimp Variations

  • To change up these shrimp tacos depending on your preferences or what you have on hand, consider these swaps and additions:
  • Protein: Use this same technique for blackened fish, like mahi-mahi or tilapia, or chicken or tofu.
  • Mayonnaise: Swap part of the mayonnaise with Greek yogurt or sour cream for a lighter slaw dressing.
  • Corn tortillas: Use flour tortillas if preferred, or lettuce wraps.
  • Avocados: Substitute with guacamole for a fun topping.
  • Toppings: Add a fresh touch with pico de gallo, pickled red onions, fresh cilantro, charred fresh corn, or other toppings as desired.
