    Heat 2 tablespoons oil in a large skillet over medium-high until shimmering. While oil heats, toss shrimp with 2 1/2 teaspoons Cajun seasoning and 1/4 teaspoon salt until evenly coated. Add shrimp to hot oil in a single layer; cook, undisturbed, until bottom side is lightly golden brown, 2 to 3 minutes. Turn shrimp, and cook just until they are opaque throughout, about 1 minute. Transfer to a large plate, and wipe skillet clean.

    Add andouille and 1 tablespoon oil to skillet, and cook over medium, stirring often, until browned and crisp in spots, about 7 minutes. Add shallot and remaining 1/4 teaspoon Cajun seasoning, and cook, stirring often, until shallot is just softened, about 2 minutes. Add vinegar, scraping bottom of skillet with a wooden spoon to release browned bits. Remove from heat; stir in 3 tablespoons water, followed by the honey and mustard. Set aside.

    Toss together salad greens, tomatoes, cucumbers, fresh herbs, lemon juice, and remaining 1 tablespoon oil and 1/4 teaspoon salt in a large bowl until evenly coated. Arrange salad greens on a large platter, and top with cooked shrimp. Spoon andouille mixture over salad; garnish with additional chopped fresh herbs.
