Place the flour tortillas on a cutting board or clean surface and sprinkle the cheese on top, going right to the edges.

Divide the chicken between the two tortillas, making an even layer on one side of the tortilla. If the chicken is unseasoned, sprinkle with taco seasoning.

One the opposite side of the tortilla, sprinkle the vegetables in an even layer - dividing equally among the two tortillas.

Fold the tortillas, chicken side over the vegetable side for ease.

Add the oil or butter to a large skillet over medium heat.

Place the folded tortillas in the oil and cook for 2 minutes per side, until lightly golden and the cheese is completely melted.
