Instructions

  1. 01

Cook Noodles - Boil a large pot of salted water. Cook noodles according to package directions, minus 2 minutes, drain. Cut noodles in half and set aside.

  2. 02

Prepare Ricotta Mix - Mix ricotta cheese, chopped parsley, parmesan cheese, egg, salt and pepper until combined, in a medium-sized bowl.

  3. 03

Assemble Lasagna - Build the layers of the lasagna directly into the wells of your Souper Cubes 2-cup trays. For this recipe you will need three Souper Cubes 2-cup trays, which will give you 6 portions. Spread evenly, ⅓ cup spaghetti sauce in the well of each 2-cup tray. Then, add one lasagna noodle (cut in half), over the sauce. Next, spread heaping 2 tablespoons of ricotta mix over the noodles. Then add about ⅓ cup mozzarella cheese on top of the ricotta mixture. Repeat the process one more time. Finish with a final layer of ⅓ cup sauce and ⅓ cups shredded mozzarella.

  4. 04

Place the trays with labeled lids in the freezer overnight to fully freeze.

  5. 05

Allow the trays to stand on the counter for 5 minutes before removing the lid and pop out the frozen cubes. This will allow the cubes to pop out much easier for you.

  6. 06

Optional: Pop-out the cubes and transfer them to freezer-safe bags. Label and return back to the freezer.

  7. 07

If you froze your lasagna without pre-baking: When you are ready to bake, remove your lasagna from the freezer to thaw in Souper Cubes 5-inch baking dish, covered, ideally for a few hours to overnight. Preheat the oven to 350 F, then bake, with the silicone cover on ajar, until the thermometer registers 165F and is bubbling on the edges, for about 30 minutes. Alternatively, you can bake from frozen, for best results, simply place the frozen lasagna into a Souper Cubes 5-inch baking dish, and put on the silicone cover and place into the microwave at 50% power, until slightly thawed, about 5 minutes. Then place the semi-thawed lasagna, covered, in a preheated oven to 350F, then cook until it is bubbling on the edges, for about 30 minutes. Remove the cover and cook until the thermometer registers 165F in the middle, about 10 minutes.
