Homemade Drop Dumplings

This is the classic drop dumplings that you probably remember from vintage chicken and dumplings or in soup recipes.You can easily double this dumpling recipe if you're making a bigger batch of soup.

    In a medium mixing bowl, stir together flour, baking powder, and salt. Add pepper to taste.

    Into the dry mix, cut in the unsalted butter until the mixture is crumbly and butter pieces are no larger than pea-sized. (I just use a fork to cut in the butter a little at a time, but you can use a pastry cutter or even your fingers.)

    Stir in 1/4 cup of milk, a little at a time, until the dough is completely mixed. Dough consistency should be firm enough (not runny) that it can be spooned into the soup without falling apart or separating. (You may need a little less or a little more milk.)

    Drop dumplings into soup or stew by spoonfuls in the last 15 minutes of cooking, taking care not to let them touch (if possible). This recipe will make about 8 medium sized dumplings, but you can drop smaller spoonfuls if you want more. Place lid on soup and cook for 15 minutes or until dumplings are no longer doughy inside.     Spoon soup into bowl and then top with cooked dumplings. Serve immediately.
