Honey-Mustard Chicken with Zucchini
Sweet, tangy honey-mustard dressing does double duty in this easy sheet-pan dinner, coating the chicken before broiling and serving as a simple finishing sauce.

Place a rack about 9 inches from broiler; preheat oven to 400°F. Lightly coat a large rimmed baking sheet with cooking spray. Position trimmed chicken thighs on one half of the prepared baking sheet; coat both sides with 1 tablespoon oil and sprinkle both sides with ¼ teaspoon each salt and pepper. Bake for 8 minutes.

Remove the baking sheet from the oven. Carefully add zucchini and bell pepper to the empty side of the baking sheet. Drizzle the vegetables with the remaining 1 tablespoon oil; sprinkle with the remaining ¼ teaspoon each salt and pepper. Toss well and spread in a single layer.

Preheat broiler to high. Brush both sides of the chicken pieces with 2 tablespoons honey mustard. Broil until the vegetables are crisp-tender and slightly browned on the edges and an instant-read thermometer inserted in the thickest part of the chicken registers 175°F, 8 to 10 minutes.

Meanwhile, microwave 1 package rice according to package instructions. Divide among 4 plates; top with the vegetables and chicken. Spoon the remaining 1 tablespoon honey mustard over the chicken.
