Simple and Easy Chicken Caesar Salad
Chicken caesar salad is the absolute perfect go-to for your working-from-home lunch or a quick weeknight dinner.

Make your homemade caesar dressing and set aside.

Over medium heat (grill or pan) add in 1 TBSP of butter until melted. Sprinkle on a few pinches of salt and pepper on both sides of the chicken breast. Place the chicken on the pre-heated grill/pan and let it brown. Cook on the first side for about 10-12 minutes and then flop to the other side, brown and cook until the chicken is cooked through about 5-8 minutes - chicken should have an internal temperature of 165F.*if using the grill top or a stainless steal pan, the chicken will stick to the bottom. Do not try to move the chicken breasts, once they are browned, they will lift and move easily without tearing.

While your chicken cooks, you can prep your salad.

Roughly chop your lettuce. Wash your lettuce and spin or pat dry. Place in a serving bowl.

Add your shredded parmesan cheese and croutons.

Add your salad dressing, and toss so that everything is distributed evenly.

Remove your chicken from cooking, let it rest for 5 minutes. Slice or cut into bite-size pieces and top your salad.
